Originally from Spain and more precisely from the city of Estepa, these shortbread with cinnamon, orange blossom or lemon zest are very good and very famous, especially during the end of the year holidays. These cookies are kept for 1 to 2 weeks in an airtight container.

For 20 cakes          Preparation : 15 minutes           Cooking time : 20 minutes


  • 500g of flour
  • 200g of powdered sugar
  • 1 or 2 sachets of vanilla sugar
  • 1 pinch of baking powder
  • 25 cl of sunflower oil
  • Cinnamon powder


Preparation:


  • First of all preheat the oven to 190 ° C (th 6/7).
  • In a salad bowl, mix the flour with the caster sugar and the vanilla sugar with a wooden spoon. Then add the yeast and mix. Finally, gently pour the sunflower oil while continuing to mix until you get a smooth paste.
  • Knead the dough by hand for a few moments. Make sure it is quite friable.
  • Take the equivalent of a large tablespoon of this preparation and make small balls of 50g dough with your hands (If the preparation sticks, you can oil your hands slightly). Place the balls on a baking sheet previously covered with baking paper. Lightly press the center of the balls with your finger.
  • Put a pinch of cinnamon in the center of each ball and bake for 20 minutes. Make sure the cakes stay white enough. Let cool before eating.

  • 2 egg whites

Preparation:

  • First of all preheat the oven to 180 ° C.
  • Beat the egg whites in an electric mixer. Once the whites start to rise, add the sugars little by little.
  • By Using a spatula, gently add the melted butter. Mix and add the flour. Mix again.
  • On a baking mat, make small, spaced piles of preparation with a spoon. Spread the piles slightly with the back of the spoon. Sprinkle some tiles with flaked almonds and other tiles with chocolate chips.
  • Bake for 8 to 10 minutes in a hot oven. As soon as you leave the oven, unmold the tiles gently and let them dry on a rolling pin so that they take shape.
  • Keep these tiles in a metal box a few days.
