Taco Pasta:  Ingredients 1 lb ground beef 8 oz uncooked rotini pasta 2 cups water 1 packet sugar free taco seasoning 1 cup sugar free salsa 1½ cups shredded fiesta blend cheese Directions In a large skillet, cook the ground beef until crumbled and done. Add the pasta, water, taco seasoning and salsa. Bring to a boil. Cover and reduce heat to a simmer and let cook for 15 minutes or until pasta is tender. Add the cheese. Stir to melt. Serve and enjoy. Brownie Butter Cake

This recipe is not for diet, you can eat it in diet-resting days. Ingredients: Brownie: 140g (5oz) dark chocolate (broken into pieces) 50g (¼ cup) unsalted butter 50g (¼ cup) brown sugar 1 Egg 35g (¼ cup) all-purpose flour Butter cake: 120g (½ cup) unsalted butter 100g (½ cup) sugar (I reduced by 1 Tbsp) 2 Eggs 120g (1 cup) all-purpose flour 2g (¼ tsp) baking powder 50ml (3 ½ Tbsp) fresh milk Method: Grease and line a 10cm x 20cm (4×8-in) loaf pan with aluminium foil. Preheat oven to 180C/350F. To make brownie, melt chocolate and butter over low heat. Remove and leave to cool slightly. Stir in brown sugar until blended. Add in egg, mix well. Fold in flour, mix until well combined. Pour batter into prepared pan. Bake in preheated oven for 15 minutes. Remove. To make butter cake, beat butter with sugar until creamy. This recipe is good and right for diet, you can eat it at lunch only. chicken breasts stuffed with the tangy flavor of feta and the vegetable goodness of almost a pound of spinach! Gather: 3 chicken breasts 8 oz chopped spinach 3 oz feta, crumbled ( about ½ cup ) 4 oz cream cheese 1 clove garlic, diced ¼ teaspoon salt, divided ⅛ teaspoon pepper 1 tablespoon olive oil Make: Preheat oven to 450 degrees fahrenheit. Mix the chopped fresh spinach, feta, cream cheese, garlic and half of the salt in a medium sized bowl. Cut a pocket into each chicken breast. If you are unsure of how to cut a pocket into the chicken without also cutting a pocket into your hand, try this: One at a time, place the chicken flat on a cutting board, and press a large spatula ( or something else that cannot be stabbed, i.e. DO NOT USE YOUR HAND) flat on top of the breast. Lemon Gooey Butter Cookies

This recipe is not for diet, you can eat it on diet-resting days. These cookies freeze well. Just remember to double wrap them in freezer bags and place them in a sturdy freezer container. When defrosting remove them from all wrapping and let defrost uncovered.  Ingredients 1 stick of butter room temperature 1 eight ounce box of cream cheese room temperature 1 egg 1 tablespoon lemon juice 1 tablespoon lemon zest 1 box lemon cake mix (I use Duncan Hines lemon supreme) 1 cup powdered sugar Instructions Cream butter and cream cheese with mixer. Add egg, lemon juice and lemon zest; mix until combined on low. Add the lemon cake mix in three parts mixing until combined after each part. Refrigerate dough for 2 hours. Roll into 1 inch balls and roll through the powdered sugar. Place on cookie sheets covered with parchment paper. Bake 10-12 minutes at 350 degrees.
