French Fries

French fries (North American English), chips (British English), finger chips (Indian English), or French-fried potatoes are batonnet or allumette-cut deep-fried potatoes. In the United States and most of Canada, the term fries refers to all dishes of fried elongated pieces of potatoes, while in the United Kingdom, Australia, South Africa (rarely), Ireland and New Zealand, thinly cut fried potatoes are sometimes called shoestring fries or skinny fries to distinguish them from the thicker-cut chips. Tiramisu with biscuits 180 g of biscuits 10 cl of strong coffee 4 eggs 50 g of sugar 250 g of mascarpone Preparation FOR TIRAMISU WITH BISCUITS 1. Moisten the biscuits one by one to cover the bottom of the dish or ramekins.  2. Separate the whites from the egg yolks.  3. In a bowl, whisk the yolks and sugar until the mixture is white. Add the mascarpone and continue mixing until you have a smooth preparation.  4. Beat the egg whites and add them to the mixture.  5. Spread a first layer of cream in the ramekins.  6. Cover with a second layer of speculoos soaked in the coffee. Crumble them a little if necessary in order to have a regular thickness.  7. Cover with remaining cream. Taco Pasta:  Ingredients 1 lb ground beef 8 oz uncooked rotini pasta 2 cups water 1 packet sugar free taco seasoning 1 cup sugar free salsa 1½ cups shredded fiesta blend cheese Directions In a large skillet, cook the ground beef until crumbled and done. Add the pasta, water, taco seasoning and salsa. Bring to a boil. Cover and reduce heat to a simmer and let cook for 15 minutes or until pasta is tender. Add the cheese. Stir to melt. Serve and enjoy. In the 1st century AD writings of Horace, lagana (singular: laganum) were fine sheets of fried dough and were an everyday foodstuff. Writing in the 2nd century Athenaeus of Naucratis provides a recipe for lagana which he attributes to the 1st century Chrysippus of Tyana: sheets of dough made of wheat flour and the juice of crushed lettuce, then flavoured with spices and deep-fried in oil. An early 5th century cookbook describes a dish called lagana that consisted of layers of dough with meat stuffing, a possible ancestor of modern-day lasagna. However, the method of cooking these sheets of dough does not correspond to our modern definition of either a fresh or dry pasta product, which only had similar basic ingredients and perhaps the shape. The first concrete information concerning pasta products in Italy dates from the 13th or 14th century. INGREDIENTS 1 kg of veal cut in the leg or in the necklace 4 cloves minced garlic 1 C. sautéed ginger tea 1/2 c. coffee turmeric 2 tbsp. tablespoon of sunflower oil 3 c. tablespoon of olive oil 1 small bunch of parsley and coriander 1/2 lemon confit 6 artichokes 2 cardoon heads 1 fresh lemon 150 g of purple olives 1 liter of water salt PREPARATION Place the meat in a pot, add the spices, garlic, the bouquet of herbs and the sunflower oil. Cover the pot, and bring to a boil and simmer until the meat becomes tender. Clean the artichokes and lemon. Clean the cardoons, cut into regular sections and lemon. Once the meat is cooked, take it out of the pot, film it and set it in a warm place. Arrange the vegetables in the sauce and add the chopped lemon confit. Cover and cook the vegetables over low heat for 15 to 20 minutes then add the olives and olive oil. Continue cooking for 10 minutes until the sauce is reduced. Ingredients For the strudel dough: 1/4 cup unsalted butter melted(55g) 1 1/2 cups all-purpose flour (200g) 1 pinch of salt 1/3 cup water lukewarm (80ml) For the apple filling: 1/3 cup golden raisins 50g 4 medium apples 1 tbsp lemon juice 1 tsp ground cinnamon 1/2 cup granulated sugar (100g) 1/4 cup slivered almonds finely chopped (30g) 1 tsp vanilla extract To assemble: 6 tbsp unsalted butter melted (90g) 1/4 cup breadcrumbs (30g) Instructions In the bowl of a stand mixer fitted with the paddle attachment combine melted butter, flour, salt, and lukewarm water. Mix at medium speed about 1 minute until a smooth and elastic dough forms. In a small saucepan (with a lid) bring water to a boil then remove the pot from the heat, empty the pot and dry it with a dish towel. Ingredients: Brownie: 140g (5oz) dark chocolate (broken into pieces) 50g (¼ cup) unsalted butter 50g (¼ cup) brown sugar 1 Egg 35g (¼ cup) all-purpose flour Butter cake: 120g (½ cup) unsalted butter 100g (½ cup) sugar (I reduced by 1 Tbsp) 2 Eggs 120g (1 cup) all-purpose flour 2g (¼ tsp) baking powder 50ml (3 ½ Tbsp) fresh milk Method: Grease and line a 10cm x 20cm (4×8-in) loaf pan with aluminium foil. Preheat oven to 180C/350F. To make brownie, melt chocolate and butter over low heat. Remove and leave to cool slightly. Stir in brown sugar until blended. Add in egg, mix well. Fold in flour, mix until well combined. Pour batter into prepared pan. Bake in preheated oven for 15 minutes. Remove. To make butter cake, beat butter with sugar until creamy.
